Ask five pizza makers how much dough goes into a 12-inch pizza and you'll get five confident, different answers. The reason is that most people size dough by feel or by habit. There's a more reliable way: scale the dough to the pizza's surface area, because surface area — not diameter — is what the dough actually has to cover.

Why area, not diameter

A 16-inch pizza looks "a bit bigger" than a 12-inch, but the area math says otherwise: a 12-inch pizza is about 113 square inches, while a 16-inch is about 201 — nearly 80% more pizza. If you only add a little more dough for the 16-inch, you get a stretched-thin, floppy middle; if you use 16-inch dough on a 12-inch pie, you get a bready, thick result. Working per square inch keeps the crust consistent at every size: this site uses 0.09 ounces of dough per square inch for a regular crust and 0.075 for thin, numbers in line with common pizzeria practice.

These factors are a starting point, not a law. If you like a puffier rim, nudge the loading up; if you chase cracker-thin bar pizza, come down toward 0.07 oz per square inch. The important part is to change the factor, not to eyeball each ball — consistency is what lets you improve batch over batch, because when every ball is the same weight, differences in the result come from things you actually changed.

One more practical reason to weigh dough balls: portioning. When a batch is divided by eye, the last ball is always the runt.
